To prevent foods from drying out or overcooking prior to being served, the Winston HOV5-04HPE CVap® holding cabinet uses controlled vapor technology—a mechanism that uses water vapor to control food temperature and heated air to manage food texture. Using a C-Touch control, evaporator and temperatures can be adjusted in 1-degree-Fahrenheit increments to personalize desired results. Operators can monitor temperature records by downloading a HACCP program from the unit and onto their computer by simply inserting a USB into the port; this enables users to track cycle records to ensure safe food is being served. To streamline operation, it includes an automatic water fill mechanism, minimizing hands-on maintenance.
The Winston HOV5-04HPE commercial holding cabinet's half-size structure works best for medium-volume applications. It accommodates four 18-inch by 13-inch half-size sheet pans and four 12-inch by 20-inch by 2.5-inch hotel pans, and each rack has a 65-pound load limit. This unit's stainless steel exterior and interior withstand common wear from loading and unloading product and opening and closing the hinged door; this metal construction also resists corrosion, so it's safe to use in humid environments. Installable on a countertop, it measures 20 inches wide by 26.45 inches deep by 36.38 inches high. To simplify counter storage, it has a stackable design.
